You’ll Need
- 1/4 small red onion
- 3 tbsp minced fresh cilantro
- 1/2 small jalapeño chile, seeded and minced
- 1 (15-ounce) can diced tomatoes, drained
- 2 tsp lime juice, plus extra for seasoning
- 1/2 teaspoon garlic powder
- 1/4 tsp sea salt
- Pinch of black pepper
Make It
Put the onion, cilantro, and jalapeño in your food processor. Pulse ~5 times until chopped fine. Scrape down the sides when stuff sticks.
Add tomatoes, lime juice, garlic powder, salt, and pepper. Process ~20-30 seconds until smooth.
Taste and adjust salt or lime juice.
Keep the jalapeño seeds if you want heat. Canned tomatoes work better than fresh here – they’re consistent year-round and already partially broken down. This keeps for 3 days but never lasts that long.

Quick Blender Salsa
Chips and jarred salsa at my house means I forgot to go shopping. This takes 2 minutes and tastes way better than the stuff sitting on grocery shelves for months.
Ingredients

Instructions

- Add tomatoes, lime juice, garlic powder, salt and pepper. Process 20-30 seconds until smooth.
- Season to taste with additional salt and lime juice.
- Serve immediately or refrigerate up to 3 days.
