Ingredients (~30 cookies)
- 3 3/4 cups all-purpose flour
- 1 1/2 tsp baking soda
- 1 tsp fine salt
- 1 cup + 2 Tbsp (2 1/4 sticks) unsalted butter, at room temperature
- 1 cup + 2 Tbsp granulated sugar
- 1 cup + 2 Tbsp light brown sugar, packed
- 3 large eggs
- 2 1/4 tsp pure vanilla extract
- 10.5 oz M&M chocolate candies
Make the Cookie Dough
Adjust an oven rack to the middle position and preheat the oven to 350°F. Line three large baking sheets with parchment paper.
In a medium bowl, whisk together the flour, baking soda, and salt.
In the bowl of a stand mixer fitted with the paddle attachment, beat the room-temperature butter on medium speed until creamy, about 1 minute. Add the granulated and brown sugars and beat on medium speed for ~2-3 minutes, until light and fluffy.
Scrape down the sides of the bowl. Add the eggs and vanilla, and mix on low speed until smooth.
Add the flour mixture and beat on low speed until just combined. Add the M&Ms and mix on the lowest speed until distributed.
Bake the Cookies
Form the dough into 2-tablespoon balls and place 8 cookies on each prepared sheet pan.
Bake one pan at a time. Bake for ~8 minutes; the cookies will be slightly puffed in the center. Give the pan a slight tap in the oven to help settle them.
Continue baking until the edges are just turning golden brown but the center is still soft, ~2-3 minutes more. The total bake time will be ~10-11 minutes.
Give the pan one final tap in the oven and then transfer the pan to a wire rack. The cookies will look puffed when pulled from the oven but will slowly deflate as they cool on the pan.
Let the cookies cool completely on the pan before removing them; this is important for them to set properly.

Soft and Chewy M&M Cookies
