Apple Pie Overnight Oats Recipe

This tastes like apple pie filling but it's actually healthy. I make 3-4 jars on Sunday and breakfast is done for half the week.

Get These Together

  • 3 tbsp old fashioned rolled oats
  • 1/4 tsp ground cinnamon
  • Pinch of ground ginger
  • Pinch of ground cloves
  • Pinch of sea salt
  • 1/2 medium apple, cored and chopped (peeling optional), any variety
  • 1/2 cup unsweetened vanilla almond milk
  • 1 tbsp honey
  • 1/2 cup plain Greek yogurt (non-fat)
  • 1 tbsp chia seeds
  • Optional toppings: toasted almonds or walnuts, dried fruit like raisins, cranberries, or apricots, extra honey

Layer Everything in a Jar

Take a 16-ounce mason jar or any container with a lid.

Add the oats, cinnamon, ginger, cloves, and salt first – this keeps the spices from clumping when you add the wet ingredients.

Drop your apple chunks on top of the oats.

Pour in the almond milk and honey, then add the Greek yogurt. Sprinkle the chia seeds last.

Don’t stir it – just cap the jar and put it in the fridge. The ingredients will hydrate and meld together overnight. These keep for up to 5 days.

If you’re out of jars, a bowl works fine. Layer everything the same way and cover with plastic wrap.

The Next Morning

Give the jar a good shake to mix everything. The chia seeds will have absorbed liquid and thickened everything up.

If it’s too thick – and it usually is – add a splash more almond milk until you get the consistency you want. I usually need about 2 tablespoons.

Top with whatever you’ve got – fresh apple chunks, toasted nuts, extra honey. The overnight soaking makes the oats creamy while the apple pieces stay firm enough to give some texture.

  • Before eating, shake jar well to combine.
  • Add extra almond milk if needed to reach desired consistency.
  • Top with optional nuts, dried fruit, or honey.
