Apple Pie Overnight Oats

This tastes like apple pie filling but it's actually healthy. I make 3-4 jars on Sunday and breakfast is done for half the week.

Ingredients

  • 3 tbsp old fashioned rolled oats
  • 1/4 tsp ground cinnamon
  • Pinch of ground ginger
  • Pinch of ground cloves
  • Pinch of sea salt
  • 1/2 medium apple cored and chopped (peeling optional), any variety
  • 1/2 cup unsweetened vanilla almond milk
  • 1 tbsp honey
  • 1/2 cup plain Greek yogurt non-fat
  • 1 tbsp chia seeds
  • Optional toppings: toasted almonds or walnuts dried fruit like raisins, cranberries, or apricots, extra honey

Instructions

  • In 16-oz mason jar, layer oats, spices (cinnamon, ginger, cloves, salt), and chopped apple.
  • Pour in almond milk and honey.
  • Add Greek yogurt and sprinkle chia seeds on top.
  • Seal jar and refrigerate overnight or up to 5 days.
  • Before eating, shake jar well to combine.
  • Add extra almond milk if needed to reach desired consistency.
  • Top with optional nuts, dried fruit, or honey.
