Banana Oat Pancakes Recipe

When bananas turn brown on the counter, this is what happens. The oats make them hearty enough that you don't need seconds. Or thirds.

What Goes In

  • 1¼ cups all-purpose flour
  • 2½ teaspoons baking powder
  • ¼ teaspoon sea salt
  • 2 ripe bananas
  • 1½ cups milk
  • 1 cup old-fashioned rolled oats
  • 2 large eggs
  • 3 tablespoons canola oil
  • 2 tablespoons dark brown sugar
  • 1 tablespoon honey
  • Canola oil spray

The riper the bananas, the better. Those black-spotted ones work perfect. The oats keep these filling – regular pancakes leave you hungry an hour later.

Mix Dry

In a large bowl, whisk flour, baking powder, and salt.

Prep the Bananas

Mash the bananas in a medium bowl. Get them mostly smooth with a few lumps.

Add milk and oats. Whisk together and let sit ~5 minutes. The oats need to soften.

Add Wet Ingredients

Whisk in eggs, oil, brown sugar, and honey until completely mixed. No egg streaks.

Combine Everything

Pour banana mixture into the flour bowl. Whisk gently just until no dry flour shows. Lumps are fine – overmixing makes them tough.

Cook the Pancakes

Spray a 12-inch nonstick skillet with oil. Heat over medium ~1 minute until a water drop sizzles.

Scoop batter with a ¼-cup measure. You’ll fit 3 pancakes with space between.

Cook ~2-3 minutes until golden on bottom. Bubbles will form and pop on top when ready to flip.

Flip and cook ~2-3 minutes more until golden.

Keep Going

Transfer to plates and repeat with remaining batter – about 4 more batches.

Spray pan between batches if it looks dry.

  • 2 tablespoons dark brown sugar
  • 1 tablespoon honey
  • Canola oil spray

Instructions

  • Whisk flour, baking powder, and salt in large bowl.
  • Mash bananas until mostly smooth with few lumps.
  • Mix bananas with milk and oats, let rest 5 minutes.
  • Whisk in eggs, oil, brown sugar, and honey until combined.
  • Pour banana mixture into flour, whisk just until incorporated.
  • Heat nonstick skillet over medium, spray with oil.
  • Pour 1/4 cup portions of batter, cook 3 pancakes at a time.
  • Cook 2-3 minutes until bubbles form, flip, cook 2-3 minutes more until golden.
  • Repeat with remaining batter, spraying pan between batches.
  • Makes about 12-15 pancakes.
