Ingredients
- 1 tbsp olive oil
- 1 lb ground beef or turkey
- 1/2 tsp garlic powder
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
For the Mac Sauce
- 1 cup plain Greek yogurt or sour cream
- 2 tbsp sweet pickle relish
- 1/4 cup ketchup
- 2 tsp yellow mustard
- 2 tsp pickle juice
- 2 tsp white vinegar
- 1/4 cup white onion, chopped fine
- 2 garlic cloves, minced
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
For the Salad
- ~10 cups romaine lettuce, shredded
- 1 cup dill pickles, chopped
- 1 cup white onion, chopped fine
- 1 cup tomato, roughly chopped
- 1 cup sharp cheddar, shredded
- 2 tsp sesame seeds, optional
Cook the Beef
In a medium skillet, heat the olive oil over medium-high heat. Add the ground beef and cook for ~3-4 minutes, breaking it up with a spoon as it starts to brown.
Add the garlic powder, salt, and pepper. Continue to cook until no pink remains, then remove from the heat and set aside.
Make the Mac Sauce
In a small bowl, mix together all of the mac sauce ingredients until well combined.
Assemble the Salad
Start with a base of shredded romaine lettuce in a large bowl or on a platter. Top with the cooked ground beef, pickles, onions, tomatoes, and shredded cheese.
Drizzle the mac sauce over the top and garnish with sesame seeds, if using.

Instructions
- Heat olive oil in skillet over medium-high heat.
- Add ground beef, cook 3-4 minutes while breaking up meat.
- Season with garlic powder, salt, and pepper; cook until no pink remains.
- Mix Greek yogurt, pickle relish, ketchup, mustard, pickle juice, vinegar, chopped onion, minced garlic, salt and pepper in bowl.
- Layer shredded romaine in large bowl.
- Top with cooked beef, pickles, onions, tomatoes, and cheddar.
- Drizzle with sauce and sprinkle with sesame seeds.
Notes
Can substitute ground turkey for beef. Greek yogurt can be replaced with sour cream.
