Blueberry and Banana Overnight Oats Recipe

This is my breakfast when I actually remember to prep something the night before. Takes about 2 minutes to throw together, then you wake up to breakfast already made. No cooking, no dishes, just grab and go.

Ingredients

  • 1/2 cup rolled oats
  • 1/2 cup whole milk
  • 1 tbsp chia seeds
  • 1-2 tbsp maple syrup, depending on your sweet tooth
  • 1/2 tsp ground cinnamon
  • 1/4 cup sliced banana
  • 1/3 cup fresh blueberries

Mix It Up

In an 8oz mason jar, add the oats, chia seeds, maple syrup, and cinnamon.

Pour in the milk and stir until everything’s combined. The chia seeds will look weird at first but they’ll plump up overnight.

Let It Sit

Put the lid on and stick it in the fridge for at least 4 hours. Overnight is better – the oats get creamier and the chia seeds turn into this pudding-like texture.

Add Fruit and Eat

In the morning, top with the banana slices and blueberries.

Give it all a stir to mix the fruit through, or leave it on top if you like the layers.

Eat it straight from the jar. That’s the whole point – no bowls to wash.

You can eat this cold or let it sit on the counter for ~10 minutes if you don’t like super cold breakfast. Also works heated up for ~30 seconds in the microwave if it’s freezing outside.
