You’ll Need
- 1/2 cup dark chocolate chips, melted
- 1 cup cottage cheese
- 1 tsp vanilla extract
- 1 egg
- 1/4 cup melted unsalted butter
- 3/4 cup milk
- 1/2 cup sugar-free sweetener (like monkfruit)
- 1/2 cup cocoa powder
- 3/4 cup whole wheat flour
- 3/8 tsp baking soda
- 1/4 tsp sea salt
- 1/2 cup mini chocolate chips
Get Started
Heat oven to 350F. Spray a 9×9 pan or line with parchment.
Blend the Wet
Put the cottage cheese, melted chocolate, butter, vanilla, egg, milk, sweetener, and cocoa powder in your food processor.
Blend on high until completely smooth. No cottage cheese texture should be left – takes about 45 seconds.
Mix the Dry
In a large bowl, whisk together the flour, baking soda, and salt.
Make the Batter
Pour the chocolate mixture into the flour bowl. Fold with a spatula just until combined – lumpy is fine.
Fold in the mini chocolate chips. Don’t overmix or they’ll be tough.
Bake
Spread the batter in your pan, pushing into the corners.
Bake for ~20-25 minutes. A toothpick should come out with moist crumbs, not wet batter.
Let them cool completely before cutting – they’re too soft when warm and will fall apart. Cut into 16 squares.
The whole wheat flour and cottage cheese make these filling. One square actually satisfies instead of making you want to eat the whole pan. Sugar-free sweetener works great here but regular sugar is fine too – use the same amount.
