Cottage Cheese Brownies

Nobody believes these have cottage cheese until I show them the container. The blender turns it into extra protein that makes these fudgy instead of cakey.

Ingredients

  • 1/2 cup dark chocolate chips melted
  • 1 cup cottage cheese
  • 1 tsp vanilla extract
  • 1 egg
  • 1/4 cup melted unsalted butter
  • 3/4 cup milk
  • 1/2 cup sugar-free sweetener like monkfruit
  • 1/2 cup cocoa powder
  • 3/4 cup whole wheat flour
  • 3/8 tsp baking soda
  • 1/4 tsp sea salt
  • 1/2 cup mini chocolate chips

Instructions

  • Preheat oven to 350F. Line 9x9 pan with parchment.
  • Blend cottage cheese, melted chocolate, butter, vanilla, egg, milk, sweetener, and cocoa powder until completely smooth, about 45 seconds.
  • Whisk flour, baking soda, and salt in large bowl.
  • Pour chocolate mixture into flour mixture and fold until just combined.
  • Fold in mini chocolate chips.
  • Spread batter in pan.
  • Bake 20-25 minutes until toothpick has moist crumbs.
  • Cool completely before cutting into 16 squares.
