Ham and Cheese Croissants Recipe

Fancy brunch that's really just ham sandwiches on croissants. The two cheese combo is what makes these better than the coffee shop version.

What You Need

  • 8 mini croissants (1.5 ounces each)
  • 8 tsp Dijon mustard
  • 8 slices deli honey ham (8 ounces)
  • 4 slices Swiss cheese (1/2 ounce each), halved
  • 4 slices Gruyère cheese (1/2 ounce each), halved
  • 1 tbsp salted butter
  • 1/2 tsp granulated garlic

Set Up

Heat oven to 350F. Line a rimmed baking sheet with parchment.

Slice croissants horizontally. Lay all pieces cut-side up on the sheet.

Add the Mustard

Spread 1 teaspoon Dijon on every cut surface – tops and bottoms both get it.

Build Them

On each bottom piece: one slice ham, half slice Swiss, half slice Gruyère.

Cap with the top pieces.

Garlic Butter

Mix butter and garlic in a microwave-safe bowl. Microwave ~20 seconds until melted and bubbling.

Brush over the top of each sandwich. Use it all.

Bake

Bake ~10 minutes until cheese oozes out and croissants turn deeper golden.

Serve immediately while cheese is gooey.

Mini croissants work better than full-size – better ratio of filling to bread. The garlic butter on top is what makes these smell so good when they come out. Swiss alone is boring, Gruyère alone is too strong – together they’re perfect.
