What You Need
- 1/2 cup maple syrup
- 1/4 cup low-sodium soy sauce
- 4 salmon fillets, 1 1/4 inches thick
- Sea salt and black pepper
- 1 tablespoon toasted sesame seeds
Set Up Your Broiler
Move your oven rack ~6 inches from the broiler. Turn on the broiler.
Line a broiler pan with foil and set the rack on top. Spray with cooking spray.
Make the Glaze
Put maple syrup and soy sauce in a small pot. Simmer over medium heat ~3-5 minutes until it reduces to about 4 tablespoons.
Pour 2 tablespoons into a small bowl and set aside. This is your finishing glaze that doesn’t touch raw fish.
Prep the Salmon
Pat fillets dry with paper towels. Season both sides with salt and pepper.
Place skin-side down on the broiler rack with ~1 inch between pieces. Brush half the glaze from the pot over the tops.
Broil
Broil ~10-12 minutes. The salmon should be mostly opaque with a hint of pink in the center.
Halfway through (~5-6 minutes), brush with the remaining glaze from the pot.
Finish
Drizzle the reserved glaze over the cooked salmon. Sprinkle with sesame seeds.
Look for fillets the same thickness so they cook evenly. Thinner pieces cook faster and the glaze can burn. Skin-on or skinless both work fine.
