Slow Cooker Garlic Parmesan Potatoes Recipe

These taste like roasted potatoes but you don't have to heat up the kitchen. Perfect for summer when you want a potato side but it's too hot to turn on the oven.

Grab These

  • 3 pounds small Yukon Gold or red potatoes
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried thyme
  • 3/4 teaspoon sea salt
  • 1/4 teaspoon pepper
  • 3 tablespoons freshly grated Parmesan cheese, plus more for serving
  • 4 tablespoons butter, melted
  • 2 tablespoons canola oil
  • 1 tablespoon garlic powder
  • 1 tablespoon chopped fresh parsley

Prep Your Potatoes

Cut any potatoes bigger than a golf ball in half. Leave the small ones whole – they cook more evenly this way.

Hit your 6-quart slow cooker with cooking spray and dump in all the potatoes.

Season Them Up

Sprinkle the Italian seasoning, thyme, salt, pepper, and Parmesan over the potatoes. Don’t stress about perfect coverage.

In a small bowl, mix the melted butter, canola oil, and garlic powder. The oil keeps the butter from burning and helps things crisp up a bit.

Pour this over your potatoes.

Cook Low and Slow

Cover and cook on HIGH for ~3 hours or LOW for ~5-6 hours. Fork tender is what you’re after.

The potatoes on the bottom get more golden from sitting in the butter – that’s normal and actually tastes great.

Finish Strong

Once they’re done, scatter the fresh parsley on top and hit them with more Parmesan.

Serve right away while everything’s hot. The cheese melts into the butter that’s coating the potatoes.

If you have leftovers, they reheat OK in the microwave but they’re definitely best fresh. The garlic powder works better than fresh garlic here – doesn’t burn during the long cook time.

  • 3 pounds small Yukon Gold or red potatoes

  • 3/4 teaspoon sea salt
  • 1/4 teaspoon pepper
  • 3 tablespoons freshly grated Parmesan cheese plus more for serving
  • 4 tablespoons butter melted
  • 2 tablespoons canola oil
  • 1 tablespoon garlic powder
  • 1 tablespoon chopped fresh parsley

Instructions

  • Cut large potatoes in half (golf ball size or bigger). Leave small ones whole.
  • Spray 6-qt slow cooker with cooking spray. Add potatoes.
  • Mix Italian seasoning, thyme, salt, pepper, and 3 tbsp Parmesan. Sprinkle over potatoes.
  • Combine melted butter, oil, and garlic powder. Pour over potatoes.
  • Cook on HIGH 3 hours or LOW 5-6 hours until fork tender.
  • Top with fresh parsley and additional Parmesan. Serve immediately.
