Slow Cooker Garlic Parmesan Potatoes
These taste like roasted potatoes but you don't have to heat up the kitchen. Perfect for summer when you want a potato side but it's too hot to turn on the oven.

Ingredients

small Yukon Gold or red potatoes
▢

teaspoon
Italian seasoning

teaspoon
dried thyme
▢
3/4
teaspoon
sea salt
▢
1/4
teaspoon
pepper
▢

tablespoons
freshly grated Parmesan cheese
plus more for serving

butter
melted

canola oil

garlic powder

chopped fresh parsley
Instructions
Cut large potatoes in half (golf ball size or bigger). Leave small ones whole.
Spray 6-qt slow cooker with cooking spray. Add potatoes.
Mix Italian seasoning, thyme, salt, pepper, and 3 tbsp Parmesan. Sprinkle over potatoes.
Combine melted butter, oil, and garlic powder. Pour over potatoes.
Cook on HIGH 3 hours or LOW 5-6 hours until fork tender.
Top with fresh parsley and additional Parmesan. Serve immediately.
