Vidalia Onion Dip Recipe

This is the dip that disappears first at every party I bring it to. Sweet onions, two kinds of cheese, and mayo baked until bubbly and golden. It's like French onion soup turned into a dip. I started making this after trying it at a potluck and begging for the recipe.

Ingredients

  • 2 cups finely chopped Vidalia onions
  • 1.5 cups shredded extra sharp cheddar cheese (~6 ounces)
  • 12 tablespoons mayonnaise
  • 1/2 cup chopped white American cheese (~2 ounces)
  • 4 tbsp thinly sliced scallion greens

Before You Start

You need sweet onions for this – Vidalia, Maui, or Walla Walla all work. Regular yellow onions are too harsh and will overpower everything.

Get some sturdy crackers or tortilla chips ready. This dip is heavy and needs something that won’t break.

Mix the Dip

Move your oven rack to center position and heat to 375F.

In a bowl, mix the onions, cheddar, mayo, American cheese, and 2 tablespoons of the scallions.

Scrape everything into a 1-quart baking dish. Spread it evenly.

Bake It

Bake for ~25 minutes until the top turns golden and the edges bubble like crazy.

The cheese will be completely melted and the onions will be soft and sweet.

Let It Cool

Pull it out and let sit for ~10 minutes. This stuff is like lava straight from the oven.

Sprinkle the remaining 2 tablespoons scallions on top.

Serve warm. It stays good for about an hour at room temp before it starts to congeal. If that happens, just pop it back in the oven for 5 minutes to remelt.

  • Preheat oven to 375°F.
  • Mix onions, cheddar, mayo, American cheese and 2 tbsp scallions in bowl.
  • Transfer to 1-quart baking dish.
  • Bake 25 minutes until golden and edges are bubbly.
  • Let rest 10 minutes.
  • Top with remaining scallions.
  • Serve warm with sturdy crackers or chips.
