Bacon Cheddar, Cottage Cheese Quiche
Started making this when eggs were cheap and I had leftover bacon from weekend breakfast. The cottage cheese trick makes it creamy without using all heavy cream.

Ingredients

frozen 9-inch pie crust

large eggs
▢

cup
cottage cheese

heavy cream

table salt

black pepper

cooked bacon
chopped

scallions
chopped
▢

shredded sharp cheddar cheese
Instructions
Preheat oven to 350F. Let frozen pie crust thaw.
Whisk eggs, cottage cheese, heavy cream, salt and pepper until smooth, about 1 minute.
Fold in chopped bacon, scallions and shredded sharp cheddar.
Pour mixture into thawed crust.
Bake 40-45 minutes until edges are golden and center barely jiggles.
Let rest 10-15 minutes before cutting into 6 wedges.
