Cottage Cheese Protein Cookies
Cookies you can eat for breakfast without guilt. Each one has 8 grams of protein and the cottage cheese makes them soft like those expensive bakery cookies.

Ingredients

whole milk cottage cheese

maple syrup
▢

teaspoon
vanilla extract

almond flour
▢

tablespoons
melted coconut oil
▢

vanilla protein powder
▢
1/2
cup
semi-sweet chocolate chips
Instructions
Preheat oven to 350F and line baking sheet with parchment.
Blend cottage cheese, maple syrup, and vanilla until completely smooth.
Mix almond flour and protein powder in large bowl.
Stir in cottage cheese mixture and melted coconut oil until dough forms.
Fold in chocolate chips.
Scoop dough onto sheet, press down each cookie.
Press extra chocolate chips on top.
Bake 15-16 minutes until golden brown on bottom.
Let rest 2 minutes on sheet.
Transfer to cooling rack until completely cooled.
