Honey Oat Bread

This is the bread I make when I'm tired of paying $6 for a decent loaf. It's got a hint of maple sweetness and oats mixed right in, so it actually tastes like something. Makes great toast and holds up to whatever sandwich filling you throw at it.

Rise Time: 2 hours
Total Time: 3 hours 5 minutes

Ingredients

  • 1.5 cups warm water ~110-115F
  • 2.25 teaspoons active dry yeast one packet
  • 1/4 cup maple syrup
  • 3 to 3.5 cups bread flour
  • 1 cup old fashioned oats
  • 1.5 teaspoons kosher salt
  • 2 teaspoons canola oil plus extra for greasing

For the topping:

  • 2 tbsp maple syrup warmed
  • 1 to 2 tbsp old fashioned oats

Instructions

  • Mix warm water, yeast, and maple syrup. Let stand 5 min until foamy.
  • In stand mixer with dough hook, combine flour, oats, and salt.
  • Add yeast mixture and oil. Mix 5-7 min until dough is tacky but not sticky.
  • Transfer to oiled bowl. Cover and rise 1 hour until doubled.
  • Punch down dough and shape into greased 9x5 loaf pan.
  • Brush top with warm maple syrup, sprinkle with oats.
  • Cover and rise 45-60 min until doubled.
  • Preheat oven to 350F.
  • Bake 40-50 min until golden and hollow-sounding.
  • Remove from pan immediately onto cooling rack.
  • Cool completely before slicing.
