Neapolitan Cookies

Strawberry, vanilla, and chocolate all in one buttery soft sugar cookie. One base dough split three ways means these triple-threat cookies come together way faster than you'd think.

Ingredients

Base Cookie Dough

  • 1 cup unsalted butter at room temperature
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs at room temperature
  • 1 Tbsp + 1 tsp vanilla extract
  • 2 2/3 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp salt

Flavor Add-Ins

  • 2 Tbsp all-purpose flour for vanilla dough
  • 2/3 cup freeze-dried strawberries finely ground
  • 2 Tbsp Dutch-process cocoa powder

For Rolling

  • 1 cup granulated sugar

Instructions

  • Cream butter and sugars until fluffy, about 2 minutes.
  • Add eggs and vanilla, mix until smooth.
  • Add flour, baking soda, baking powder, and salt. Mix on low until just combined.
  • Divide dough into three equal portions.
  • Add flour to first portion for vanilla dough.
  • Grind freeze-dried strawberries and mix into second portion.
  • Add cocoa powder to third portion.
  • Preheat oven to 350°F. Line baking sheets with parchment.
  • Scoop one tablespoon each of vanilla, strawberry, and chocolate dough.
  • Press dough balls together and roll into one tri-colored ball.
  • Roll ball in granulated sugar.
  • Place on baking sheet 2 inches apart.
  • Bake 12-14 minutes until edges are golden brown.
  • Cool on baking sheet 5 minutes, then transfer to wire rack.

Notes

Use a kitchen scale for precise dough division.
