Seeded No-Knead Bread

Artisan bread for people who think they can't bake bread. No kneading, no special skills - just mix, wait, and bake. The seeds make it look like you know what you're doing.

Cook Time: 45 minutes
Rise Time: 2 hours
Total Time: 3 hours

Ingredients

  • 1.5 cups warm water ~100-115F
  • 2.25 teaspoons active dry yeast 1 packet
  • 3 cups all-purpose flour plus extra for dusting
  • 2.5 teaspoons sea salt
  • 3 tablespoons pumpkin seeds unsalted
  • 3 tablespoons sunflower seeds unsalted
  • 1 tablespoon flax seeds
  • 1 tablespoon sesame seeds
  • 1 tablespoon poppy seeds

For the Top

  • 1 tablespoon pumpkin seeds
  • 1 tablespoon sunflower seeds
  • 1 teaspoon flax seeds
  • 1 teaspoon sesame seeds
  • 1 teaspoon poppy seeds

Instructions

  • Mix warm water and yeast in bowl, let stand 5-10 minutes until foamy.
  • In large bowl combine flour, salt and seeds.
  • Add yeast mixture, stir until shaggy dough forms.
  • Cover, let rise 2 hours until doubled.
  • Place dutch oven in oven, heat to 450F for 30 minutes.
  • Turn dough onto floured surface, fold edges to center to form ball.
  • Transfer to parchment, sprinkle with seed topping mixture.
  • Score top with X pattern.
  • Lower dough on parchment into hot dutch oven.
  • Bake covered 30 minutes.
  • Remove lid, bake 5-20 minutes until golden brown.
  • Cool on rack 15-30 minutes before slicing.
