For the Top

Instructions
Mix warm water and yeast in bowl, let stand 5-10 minutes until foamy.
In large bowl combine flour, salt and seeds.
Add yeast mixture, stir until shaggy dough forms.
Cover, let rise 2 hours until doubled.
Place dutch oven in oven, heat to 450F for 30 minutes.
Turn dough onto floured surface, fold edges to center to form ball.
Transfer to parchment, sprinkle with seed topping mixture.
Score top with X pattern.
Lower dough on parchment into hot dutch oven.
Bake covered 30 minutes.
Remove lid, bake 5-20 minutes until golden brown.
Cool on rack 15-30 minutes before slicing.
